This raw almond milk recipe I got from a raw foods cook book. The recipe is simple, delicious and nutritious. Because the almonds are raw and you make it yourself, almond milk doesn’t get any fresher than this. Simply use in place of milk.

1 cup raw organic almonds –soak overnight then strain and rinse

1 tbsp honey (preferably raw and organic)

32 ounces pure water

Add all to blender/Vitamix and blend well then strain. I use a large strainer and place over a measuring bowl then press almond pulp until all milk comes out. With the left over almond pulp, you can eat, discard or use to make your own healthy snack bars (example below).

Most energy bars are far from healthy and the list of ingredients are far from natural. I have found 2 different bars that are not only healthy; they are delicious and come in different flavors. One is a LARABAR and the other a RAWvolution bar which you can find it at most health food stores. I Like to make my own version of these. These are quick, easy, healthy, and no cooking is involved. They are completely raw, giving your body life! Even some of the healthiest snack bars can be too sweet and/or not so tasty. By making your own, you have complete control of the desired sweetness and consistency. Making your own bar can be as easy as mixing almond pulp from the almond milk (recipe above), dates and coconut. Put dates in a food processor and mix with almond pulp and shredded non-sweetened coconut. It’s that easy. You can add un-sweetened cocoa or carob for a chocolaty flavor. Once mixed, press into a baking try, refrigerate a few hours, slice in squares and eat. The amount of dates and coconut vary depending upon your taste. You can add a little bit of each to the almond pulp until you get the desired taste and consistency.
